I had a lot of great reactions to this dinner when I posted it on my Instagram Story, so I thought I’d let you guys in on the secret. If you’re looking for a quick and easy dinner idea… this bruschetta is it. And you can trust me – that’s what I’m looking for on a daily basis.
This “recipe” is literally just a few things I picked up at Trader Joe’s. So simple, it’s stupid.
You’ll need:
1 French Baguette
1 Jar of Trader Joe’s Bruschetta
1 Container of Ciliegine Mozzarella
A Bit of Dried Basil
Olive Oil
Salt & Pepper
And this is what you do:
Cut the baguette into thin slices, coat with olive oil, and toast in the oven on 350 degrees until slightly golden brown (about 5-7 minutes).
Take the slices back out of the oven and layer on the Bruschetta mix, the mozzarella balls broken into a few pieces, and then season with salt, pepper, and dried basil to taste.
(Optional: I’ve also made a version where I added a few cut up cherry tomato pieces for freshness.)
Put back in the oven until the mozzarella melts and the baguette is toasted to your liking.
Annnnd you’re done.
Seriously. Uncork some pinot, try it out, thank me later.
